garlic & lemon dressing

I consider this, the most perfect dressing.  It is so delicious but it does not overpower.  The garlicky, lemony taste compliments so many things.  I use it on salads often, but I have also tossed it with steamed veggies.  It is easy to make, and requires ingredients that are readily on hand. It tastes best when it has a few hours to sit so that the flavors infuse, however, you can make it right before you use it and it is still wonderful.  


1/2 cup of extra virgin olive oil
The juice of 1 lemon
2-3 cloves of garlic, minced
1 tablespoon of dijon mustard
salt & pepper 

Mix all the ingredients in a bowl with a whisk until blended.  Season to taste.
